5 Boozy Summer Ice Pops

Cool down this summer with a sweet, boozy treat—ice pops. They’re easy to make and even more delicious to enjoy. The bonus: the splash of liquor, which will help to bring out more flavors.

1. Cucumber Gin and Tonic Ice Pops

Ingredients:

  • 2 cucumbers, peeled and chopped

  • 1 cup fresh mint leaves

  • ¼ cup gin

  • ¾ cup fresh lime juice

  • ½ cup light agave nectar

  • Pinch of salt

Directions:

  1. Puree the cucumber, mint, gin, lime juice, agave, and salt in a blender until smooth.

  2. Pour the mixture into a 10 3-ounce or 8-4 ounce ice pop molds, dividing evenly. Insert ice-pop sticks and freeze until firm, at least 8 hours.

2. Peachy-Bourbon Ice Pops

Ingredients:

  • 2 cups peach juice

  • 1/3 cup bourbon

  • ¼ tsp Angostura bitters

  • 2 small yellow peaches, finely chopped

Directions:

  1. Combine the peach juice, bourbon, and bitters in a liquid measuring cup with a spout.

  2. Add the chopped peaches to 10 3-ounce or 8 4-ounces ice pop molds, dividing evenly. Pour the peach juice mixture into the molds. Insert ice-pop sticks and freeze until firm, at least 8 hours or overnight.

3. Mint Julep Ice Pops

Ingredients:

  • 2 ½ cups water

  • 1 cup sugar

  • 1 cup mint

  • 1/3 cup bourbon

Directions:

  1. In a saucepan, heat sugar and water over medium heat and stir until the sugar completely dissolves.

  2. After the sugar has dissolved, turn off the heat and add in the mint. Using a muddler or a wooden spoon, muddle the min—letting steep until the mixture has cooled. Then add the bourbon and combine. Pour into popsicle molds and place in the freezer.

4. Cherry Apple Whiskey Sour Ice Pops

Ingredients:

  • 3 cups cherries

  • 1 green apple

  • 1 lime

  • 1 cup whiskey

  • ½ cup sweet and sour mix

Directions:

  1. Pit cherries; set aside. Peel away apple and lime skin and cut fruit into quarters. Place all ingredients in food processor or blender and process until mixture is pureed. Mixture will be thick. Pour mixture into ice pop molds and freeze.

5. Tequila-Spiked Mango Ice Pops

Ingredients:

  • 3 cups chopped mango

  • 3 oz lime juice

  • 3 oz agave

  • 3 oz water

  • Pinch of salt

  • 3 ½ oz tequila

  • Chile powder for garnish

Directions:

  1. Chop the mango into large slices, and add it to the blender. Next, add in the lime juice, agave, water, salt, and tequila. Puree the mixture until smooth. Pour the mixture into popsicle molds and place them in the freezer.
